Preparation
  1. Preheat the oven to 375°F (190°C) and lightly grease a large baking sheet.
  2. In a large bowl, slice the potatoes into wedges.
  3. Add the olive oil to the bowl and toss to coat the wedges evenly.
  4. In a small bowl, mix together the salt, garlic powder, and Italian seasoning.
  5. Sprinkle this mix over the potato wedges, along with the parmesan cheese, while tossing again to ensure they are evenly coated.
  6. Arrange the seasoned wedges on the prepared baking sheet in a single layer with the skin sides down.

  1. Bake for 25-35 minutes until they are golden brown and fork-tender.
  2. Garnish with fresh parsley if desired before serving.

Notes

For extra crispiness, soak the potato wedges in water for 30 minutes before baking. Avoid overcrowding the baking sheet for even baking. You can customize the flavor with different herbs and spices.
