  • 1 medium Cucumber, sliced Peel if desired.
  • 1/4 medium Red onion, thinly sliced Adjust quantity to taste.
  • 1 medium Avocado, diced Make sure it's ripe.
  • 1/2 cup Walnuts or pecans, chopped Toast them for extra flavor, if desired.
Dressing Ingredients
  • 3 tablespoons Olive oil Extra virgin olive oil is recommended.
  • 2 tablespoons Balsamic vinegar Adjust according to taste.
  • 1/2 teaspoon Salt To taste.
  • 1/4 teaspoon Pepper Freshly ground is preferable.

Preparation
  1. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, avocado, and chopped nuts.
Dressing

Mixing
