  • 4 pieces live-frozen lobster tails (thawed in fridge overnight)
  • 4 tbsp unsalted butter melted
  • 3 cloves garlic (minced)
  • 1 tbsp fresh lemon juice
  • 1 zest lemon
  • 0.5 tsp smoked paprika can substitute with sweet paprika or cayenne
  • sea salt and freshly ground black pepper to taste
  • 2 tbsp chopped fresh parsley (flat-leaf parsley preferred)
  • lemon wedges for serving

Method
 

Preparation
  1. Using sharp kitchen shears, butterfly the lobster tails. Gently pry the shell open and lift the meat to ensure even cooking and a gorgeous presentation.
  2. Preheat the oven to 425°F (220°C) or heat up the grill to medium-high (about 400°F).
  3. In a saucepan over low heat, melt the butter with minced garlic, lemon juice, lemon zest, smoked paprika, salt, and pepper. Simmer briefly to blend the flavors.
  4. Coat each lobster tail with the garlic butter mix, ensuring both the meat and shell are well-covered.
Cooking
  1. Bake for 8–10 minutes until the meat is opaque and reaches 140°F internally. If grilling, keep a close eye to avoid overcooking!
  2. Halfway through cooking, baste the tails with more garlic butter.
  3. When done, remove from heat, tent with foil, and let rest for 2 minutes.
  4. Sprinkle with parsley and serve with lemon wedges.

Notes

Baste your lobster halfway through cooking to ensure each bite is drenched in deliciousness. Serve on a bed of creamy risotto or next to a fresh salad for a colorful presentation.
