Method
 

Preparation
  1. Slice the hard-boiled eggs in half and remove the yolks.
  2. In a bowl, mash the yolks with mayonnaise, mustard, salt, and pepper until smooth.
  3. Spoon or pipe the mixture back into the egg whites.
  4. Sprinkle with paprika and garnish with chives if desired.
  5. Serve chilled.

Notes

For extra flavor, consider adding hot sauce or cayenne pepper to the filling. These deviled eggs can be prepared a day in advance and kept in the fridge. They are best served chilled.
