  • 1 cup medjool dates (pits removed)
  • 1/3 cup shredded carrots
  • 1 cup walnuts Can substitute with any nuts or seeds
  • 1 tbsp chia seeds
  • 1/3 cup shredded unsweetened coconut
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • Pinch of salt
  • 1 tsp vanilla extract
  • 1/2 cup extra shredded coconut for rolling

Method
 

Preparation
  1. Add all the ingredients to a food processor.
  2. Pulse until combined and a dough forms.
  3. Using a spoon, scoop out some dough and roll it into balls.
  4. Roll each ball in the extra shredded coconut to coat.
  5. Place the energy balls in the fridge to firm up for at least one hour.

Notes

For a sweeter taste, use sweeter dates or add a bit of maple syrup or honey. You can customize these energy balls by adding different spices like ginger or cloves for a more robust flavor. If you want a chocolate twist, try adding a tablespoon of cocoa powder. To keep your energy balls fresh, store them in an airtight container in the fridge for about a week, or freeze them for longer storage.
