Preparation
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a mixing bowl, combine the grated carrots and zucchini.
- In another bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
- In a large bowl, mix sugars and oil until well combined.
- Add the eggs one at a time, followed by vanilla and lemon juice.
- Gradually add the dry ingredients to the wet mixture until just combined, then fold in the grated vegetables.
- Pour the batter into the prepared baking pan and smooth the top.
Baking
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool completely.
Frosting
- For the lemon frosting, mix powdered sugar, lemon juice, and lemon zest in a bowl until smooth. Spread over the cooled bars.
- Cut into squares and serve.
Notes
These bars keep well in the fridge for 5-7 days or can be frozen for up to 3 months. Dust with extra lemon zest for presentation or serve with whipped cream or ice cream.
