Main Ingredients
  • 1 cup grated carrots
  • 1 cup grated zucchini
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup lemon juice
For the Lemon Frosting
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice for frosting
  • 1 teaspoon lemon zest for frosting

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a mixing bowl, combine the grated carrots and zucchini.
  3. In another bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  4. In a large bowl, mix sugars and oil until well combined.
  5. Add the eggs one at a time, followed by vanilla and lemon juice.
  6. Gradually add the dry ingredients to the wet mixture until just combined, then fold in the grated vegetables.
  7. Pour the batter into the prepared baking pan and smooth the top.
Baking
  1. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  2. Allow to cool completely.
Frosting
  1. For the lemon frosting, mix powdered sugar, lemon juice, and lemon zest in a bowl until smooth. Spread over the cooled bars.
  2. Cut into squares and serve.

Notes

These bars keep well in the fridge for 5-7 days or can be frozen for up to 3 months. Dust with extra lemon zest for presentation or serve with whipped cream or ice cream.
