Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a bowl, mix together the gluten-free flour, baking soda, salt, and cinnamon.
- In another bowl, whisk the melted coconut oil (or butter), brown sugar, maple syrup, eggs, and vanilla until smooth.
- Gradually add the dry ingredients to the wet ingredients and stir until just combined.
- Fold in the diced Honeycrisp apples.
- In a small bowl, combine the brown sugar and cinnamon for the swirl.
- Pour half of the batter into the loaf pan, sprinkle with half of the cinnamon sugar mixture, and then top with the remaining batter.
- Swirl the remaining cinnamon sugar mixture on top.
Baking
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Allow to cool before slicing and enjoy!
Notes
Store in an airtight container at room temperature for up to three days. For longer storage, wrap and place in the fridge for up to a week or freeze slices individually.
