  • ¼ cup mayonnaise
  • 2 teaspoons lemon juice
  • 1 tablespoon chives (finely chopped + more for garnish)
  • ½ teaspoon fresh tarragon leaves (chopped)
  • ½ teaspoon lemon zest (loosely packed)
  • ¼ teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • to taste salt and pepper
For serving
  • 4 New England Style Split Top Buns
  • 2 tablespoons butter For toasting the buns
  • lemon wedges For serving
  • chopped chives For garnish

Method

Preparation
  1. In a medium-sized mixing bowl, combine the mayonnaise, lemon juice, chives, tarragon, lemon zest, paprika, cayenne, and salt and pepper. Mix well. If you have time, let it chill in the fridge for an hour for maximum flavor.
  2. Gently fold in the cooked lobster meat until well coated.
Toasting Buns
  1. Butter the sides of the buns and toast them in a medium/high heat frying pan until golden brown.
Assembly
  1. Spoon the lobster mixture into each toasted bun, garnish with fresh chives, and serve immediately with lemon wedges.

Notes

Serve with crispy sweet potato fries or a light salad for a colorful contrast. Keep an eye on the buns while toasting to avoid burning.
