  • 1 cup cheddar cheese, cubed Feel free to adjust the amount of cheese.
  • 1/2 cup red onion, diced Adjust the amount of onion according to taste.
Dressing Ingredients
  • 1/2 cup mayonnaise For a lighter version, consider using yogurt.
  • 2 tablespoons sugar To balance the flavors.
  • 1 tablespoon apple cider vinegar

Preparation
  1. In a large bowl, combine the sweet peas, crumbled bacon, cheddar cheese, and diced red onion.
  2. In a separate small bowl, mix together the mayonnaise, sugar, apple cider vinegar, salt, and pepper.
  3. Pour the dressing over the pea mixture and gently toss to combine.
  4. Chill in the refrigerator for at least an hour before serving.

Notes

Serve the salad as a side dish with grilled meats or sandwiches. For extra crunch, add crushed crackers or nuts on top just before serving. Store in an airtight container in the refrigerator for 3 to 5 days; add more mayonnaise if it seems dry after a few days.
