Preparation
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the cottage cheese, eggs, almond flour, baking powder, and salt. Mix until smooth.
- Gently fold in the blueberries, being careful not to crush them.
- Spoon the mixture onto the prepared baking sheet, forming small cloud shapes.
Baking
- Bake for 25-30 minutes or until the clouds turn golden brown and are set.
- Allow the clouds to cool slightly before serving.
Notes
Serve warm or at room temperature. Great on its own, or add butter/honey for sweetness. Store leftovers in an airtight container in the refrigerator for up to three days, or freeze wrapped tightly.
