  • 4 large eggs
  • 1/4 cup honey or sweetener of choice Adjust based on sweetness preference.
  • 1 teaspoon vanilla extract
Dry ingredients
  • 1 cup almond flour Can substitute with all-purpose flour.
  • 1/2 teaspoon baking powder For leavening.
  • 1 pinch salt
Fruits
  • 1 cup blueberries Fresh is best, but frozen can be used.

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the cottage cheese, eggs, honey, and vanilla extract until smooth.
  3. In another bowl, mix the almond flour, baking powder, and salt.
  4. Gradually combine the wet and dry ingredients until well incorporated.
  5. Gently fold in the blueberries.
  6. Spoon the batter onto the prepared baking sheet, forming small mounds.
Baking
  1. Bake for 25-30 minutes or until golden brown.
  2. Let cool slightly before serving.
