Preparation
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the cottage cheese, eggs, and bacon. Mix everything well.
- Season the mixture with salt and pepper. If you want, add chopped vegetables for extra flavor.
- Pour the mixture into a greased muffin tin, filling each cup about 3/4 full.
- Bake in the oven for 15-20 minutes, or until the egg bites are set and lightly golden.
- Let them cool slightly before removing from the tin. Enjoy your bites!
Notes
Store leftover Cottage Cheese Egg Bites in an airtight container in the refrigerator for up to 4 days. To reheat, microwave for a few seconds until warm. They freeze well for up to 2 months.
