  • 4 cups sweet corn, cooked and cooled Use fresh or thawed frozen corn.
  • 6 slices bacon, cooked and crumbled For a vegetarian option, substitute with smoked paprika.
  • 1 cup cheddar cheese, shredded Feel free to use a different cheese if preferred.
  • 1/2 cup mayonnaise Greek yogurt can be used as a healthier alternative.
  • 1/4 cup sour cream Can be substituted with Greek yogurt as well.
  • 1 tablespoon apple cider vinegar
  • 2 pieces green onions, sliced
  • Salt and pepper to taste Always taste and adjust before serving.

Preparation
  1. In a large bowl, combine the cooked corn, crumbled bacon, and shredded cheddar cheese.
  2. In a separate bowl, mix together the mayonnaise, sour cream, apple cider vinegar, salt, and pepper.
  3. Pour the dressing over the corn mixture and stir until well combined.
  4. Add the sliced green onions and mix gently.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Make sure the sweet corn is completely cooled before mixing to prevent wilting the greens. For extra flavor, consider adding chopped peppers or jalapeƱos. You can prepare this salad a day ahead.
