Preparation
  1. Cook the gnocchi according to package instructions and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add fresh spinach and cook until wilted.
  4. Stir in the heavy cream and feta cheese, mixing well.
  5. Add the cooked gnocchi to the skillet and toss to combine.
  6. Season with salt and pepper as needed.
  7. Serve warm, garnished with Parmesan cheese if desired.

Notes

Store leftovers in an airtight container for up to 3 days in the fridge. Freeze for up to a month; add cream or milk when reheating to maintain creaminess. Use fresh spinach for better flavor, and consider adding red pepper flakes for a little heat.
