  • 1 teaspoon Dijon mustard (optional)
  • 1 tablespoon butter (for sauce)
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried)

Preparation
  1. Pat pork chops dry with paper towels and season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add pork chops and sear for 3-4 minutes on each side until golden brown. Transfer to a plate and set aside.
Cooking
  1. In the same skillet, add chopped onion and cook for 2 minutes.
  2. Add sliced mushrooms and sauté until browned (about 4 minutes). Stir in minced garlic and cook for an additional 30 seconds.
  3. Pour in chicken broth to deglaze the pan, scraping up any browned bits. Stir in heavy cream, Dijon mustard, and butter; bring to a gentle simmer for 2-3 minutes.
  4. Return pork chops to the skillet and reduce heat to medium-low. Simmer for 5 minutes until pork is cooked through and the sauce thickens.
  5. Sprinkle with fresh thyme and parsley before serving.

Notes

This dish pairs wonderfully with sides like mashed potatoes, rice, or pasta. For extra flavor, consider marinating the pork chops for a few hours beforehand. You can use a mix of mushrooms for a more complex flavor. Make sure to scrape the bottom of the skillet when deglazing to get all the tasty bits.
