  • 4 pieces pork chops Bone-in or boneless
  • 2 cups fresh spinach Use fresh for best taste
  • 1 cup mushrooms, sliced Any variety will work
  • 1 cup heavy cream For a lighter version, use half-and-half
  • 2 cloves garlic, minced Adds flavor
  • to taste Salt and pepper For seasoning
  • 2 tablespoons olive oil For cooking

Method
 

Cooking the Pork Chops
  1. Heat olive oil in a skillet over medium heat.
  2. Season the pork chops with salt and pepper.
  3. Add the pork chops to the skillet and cook for about 5-7 minutes on each side until golden brown and cooked through.
  4. Remove the pork chops from the skillet and set them aside.
Preparing the Sauce
  1. In the same skillet, add minced garlic and sliced mushrooms. Sauté until the mushrooms are tender.
  2. Add the fresh spinach to the skillet and cook until it wilts down.
  3. Pour in the heavy cream and stir until well blended.
  4. Return the pork chops to the skillet. Spoon the creamy sauce over them and let simmer for a few minutes.
Serving
  1. Serve hot, placing each pork chop on a plate and generously spooning the creamy sauce with spinach and mushrooms over the top.

Notes

To store leftovers, let the pork chops cool to room temperature, then place them in an airtight container in the refrigerator. They can be kept for up to 3 days. To reheat, warm in a skillet over low heat with a splash of cream to restore creaminess. For extra flavor, marinate the pork chops a few hours before cooking. Add crushed red pepper flakes for spice if desired.
