  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1 cup shredded cheddar cheese (can substitute or omit)
  • 1/2 cup cooked and crumbled bacon
  • 1 cup ranch dressing
  • 1 tablespoon fresh dill, chopped (optional)
  • Salt, to taste
  • Pepper, to taste

Method
 

Preparation
  1. Wash cucumbers thoroughly, peel if desired, and dice into bite-sized pieces.
  2. In a mixing bowl, combine diced cucumbers, halved cherry tomatoes, finely chopped red onion, shredded cheddar cheese, and crumbled bacon.
  3. Pour ranch dressing over the salad mixture and gently toss to coat all ingredients evenly.
  4. Season with salt and pepper to taste, and add fresh dill if using.
  5. Transfer to a serving dish and serve immediately, or chill in the fridge for about 30 minutes to enhance flavors.

Notes

This salad can be made a few hours ahead; just stir well before serving. Consider adding chopped avocados for creaminess, or nuts/sunflower seeds for extra crunch. A vinaigrette can be used instead of ranch for a lighter twist.
