  • 6 pieces hard-boiled eggs Use older eggs for easier peeling.
  • 3 tablespoons mayonnaise Can substitute with Greek yogurt for a healthier version.
  • 1 teaspoon Dijon mustard This adds a nice tangy flavor.
  • to taste Salt Season to preference.
  • to taste Pepper Season to preference.
  • Paprika For garnish.
  • Chives or parsley Optional for garnish.

Method
 

Preparation
  1. Peel the hard-boiled eggs and cut them in half lengthwise.
  2. Remove the yolks and place them in a mixing bowl.
  3. Mash the yolks with a fork and add the mayonnaise, Dijon mustard, salt, and pepper. Mix until well combined.
  4. Spoon or pipe the yolk mixture back into the egg whites.
  5. Sprinkle with paprika and garnish with chives or parsley if desired.
  6. Serve chilled.

Notes

Store leftovers in the fridge for up to 2 days. Do not freeze as the texture may be affected. Track boiling time for the best yolk texture.
