Ingredients
  

For the Coconut Mixture
  • 5 cups unsweetened coconut (medium shred) For the base of the tail.
  • 2 cups unsweetened coconut (fine shred) Used for coloring.
  • 14 oz sweetened condensed milk
  • 2 tbsp butter, melted & cooled
  • 1 tsp vanilla extract
  • ¼ cup confectioner’s sugar
For Coloring
  • ½ cup fine-shred coconut This will be colored for coating.
  • Liquid food coloring For creating pastel colors.

Method
 

Preparation
  1. In a large bowl, whisk together the condensed milk, melted butter, and vanilla extract.
  2. Stir in the medium-shred coconut and confectioner’s sugar. Chill the mixture for 15 minutes.
  3. While the mixture is chilling, prepare your colored coconut by mixing ½ cup of fine-shred coconut with a few drops of food coloring.
Forming and Chilling
  1. After chilling, scoop the mixture into 1½ teaspoon portions, roll them into balls, and coat each ball in the colored coconut.
  2. Place the coated balls on a baking sheet and chill for 1 hour to set.
  3. Keep refrigerated until ready to serve.

Notes

Make sure to use fresh coconut for the best flavor. When adding food coloring, start with a small amount to reach your desired pastel shade. If you want a more intense coconut flavor, use unsweetened coconut for both shreds.
