Preparation
- In a large bowl, whisk together the condensed milk, melted butter, and vanilla extract.
- Stir in the medium-shred coconut and confectioner’s sugar. Chill the mixture for 15 minutes.
- While the mixture is chilling, prepare your colored coconut by mixing ½ cup of fine-shred coconut with a few drops of food coloring.
Forming and Chilling
- After chilling, scoop the mixture into 1½ teaspoon portions, roll them into balls, and coat each ball in the colored coconut.
- Place the coated balls on a baking sheet and chill for 1 hour to set.
- Keep refrigerated until ready to serve.
Notes
Make sure to use fresh coconut for the best flavor. When adding food coloring, start with a small amount to reach your desired pastel shade. If you want a more intense coconut flavor, use unsweetened coconut for both shreds.
