Ingredients
  

Dry Ingredients
  • 1.5 cups gluten-free rolled oats Make sure to use certified gluten-free oats to avoid contamination.
  • 0.5 cup almond flour Can be substituted with another gluten-free flour if needed.
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 1 teaspoon cinnamon
Wet Ingredients
  • 1 cup finely diced apples
  • 0.5 cup blueberries (fresh or frozen)
  • 0.33 cup maple syrup For a sweeter bar, you can add more maple syrup.
  • 0.25 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 2 large eggs Can be replaced with flax eggs for a vegan version.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Line an 8x8 or 9x9 pan with parchment paper and lightly grease it.
  3. In a large bowl, whisk together the oats, almond flour, baking powder, salt, and cinnamon.
  4. Stir in the diced apples and blueberries.
  5. In a separate bowl, whisk the eggs, maple syrup, melted coconut oil, and vanilla together.
  6. Pour the wet ingredients into the dry mixture and mix until combined.
  7. Spread the mixture evenly into the prepared pan and press down firmly.
Baking
  1. Bake for 25–30 minutes, or until golden on top and set in the center.
  2. Let it cool for 10 minutes in the pan, then transfer to a rack to cool completely before slicing.

Notes

These bars can be served warm or at room temperature, and they can be topped with yogurt or extra maple syrup for added flavor. Store in an airtight container.
