  • 2 pieces lobster tails Fresh or thawed
  • 4 tablespoons unsalted butter Melted
  • 2 cloves garlic, minced
  • 1 whole lemon (juice and zest)
  • to taste salt and pepper
  • fresh parsley, chopped (for garnish)

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Cut the lobster tails in half lengthwise.
Cooking
  1. In a small saucepan, melt the butter over medium heat and add the minced garlic. Cook for about 1 minute until fragrant.
  2. Add the lemon juice and zest to the butter mixture, then season with salt and pepper.
  3. Brush the garlic butter mixture over the lobster meat.
  4. Place the lobster tails on a baking sheet and bake for 12-15 minutes, or until the meat is opaque and cooked through.
  5. Garnish with fresh parsley and serve with extra lemon wedges.

Notes

Leftovers keep well in the fridge for 2-3 days in an airtight container. For longer storage, freeze for up to 3 months. Reheat in the oven before serving.
