  • 8 oz Cream cheese Softened
  • 1 cup Cheddar cheese Shredded
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 2 cups Spinach Or your favorite veggie
  • to taste Salt and pepper
  • 2 tablespoons Olive oil For sautéing

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Add shredded chicken and sauté for about 3-4 minutes.
  4. Mix in cream cheese until melted and creamy.
  5. Stir in garlic powder, onion powder, salt, pepper, and spinach.
  6. Transfer the mixture to a baking dish and sprinkle cheddar cheese on top.
  7. Bake for 20-25 minutes until bubbly and golden.

Notes

This casserole keeps well in the fridge for up to 3-4 days and can be reheated in the microwave or oven. For freezing, cool it completely before sealing it up. Experiment with veggies or substitute chicken with chickpeas for a vegan option.
