Preparation
- Preheat the oven to 425°F (220°C) and spray a baking sheet with cooking spray or line it with parchment paper.
- Place the sliced carrots in a mixing bowl and drizzle them with 2 tablespoons of olive oil. Lightly toss to coat all the carrots in the oil.
- Sprinkle 3 tablespoons of ranch seasoning onto the carrots and toss to coat evenly.
- Lay the seasoned carrots in a single layer on the baking sheet.
Cooking
- Bake for 25 minutes until the carrots begin to turn golden brown with slightly crispy edges.
- Remove the carrots from the oven and sprinkle the remaining 1 tablespoon of ranch seasoning and a pinch of black pepper on top. Toss lightly.
Serving
- Serve warm and enjoy!
Notes
To store leftover roasted carrots, let them cool completely, then place them in an airtight container. Store in the refrigerator for up to 3 days. Reheat in the oven for about 10 minutes or in the microwave until heated through.
