Ingredients
  

Carrots
  • 1.5 lbs whole carrots, peeled and sliced into 1/4-1/2 inch thick slices
Oils
  • 2 tablespoons olive oil or avocado oil
Seasoning
  • 3-4 tablespoons store-bought ranch seasoning Adjust based on taste preferences.

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C) and spray a baking sheet with cooking spray or line it with parchment paper.
  2. Place the sliced carrots in a mixing bowl and drizzle them with 2 tablespoons of olive oil. Lightly toss to coat all the carrots in the oil.
  3. Sprinkle 3 tablespoons of ranch seasoning onto the carrots and toss to coat evenly.
  4. Lay the seasoned carrots in a single layer on the baking sheet.
Cooking
  1. Bake for 25 minutes until the carrots begin to turn golden brown with slightly crispy edges.
  2. Remove the carrots from the oven and sprinkle the remaining 1 tablespoon of ranch seasoning and a pinch of black pepper on top. Toss lightly.

Notes

To store leftover roasted carrots, let them cool completely, then place them in an airtight container. Store in the refrigerator for up to 3 days. Reheat in the oven for about 10 minutes or in the microwave until heated through.
