Preparation
- Preheat your oven to 350°F (175°C) and grease a round cake pan.
- Boil the oranges in water for about 1 hour until soft.
- Drain and cool the oranges, then puree them in a food processor.
- In a mixing bowl, combine the eggs and sugar, whisking until pale.
- Add the orange puree, ground almonds, ground pistachios, baking powder, and salt, mixing until well combined.
- Pour the batter into the prepared cake pan.
Baking
- Bake for about 40-45 minutes, or until a toothpick inserted comes out clean.
- Let the cake cool before serving.
Notes
Can be served plain or dusted with powdered sugar. A dollop of whipped cream or scoop of vanilla ice cream pairs wonderfully with the cake. Best enjoyed slightly warm or at room temperature. Store any leftovers in an airtight container at room temperature for up to three days or refrigerate for about a week. For longer storage, freeze for up to three months.
