Preparation
- Simmer the rinsed oranges in water for 1 hour until they are tender.
- Drain the oranges and blend them until smooth.
- Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
- In a mixing bowl, combine the orange puree, eggs, honey, ground pistachios, almond flour, vanilla extract, and baking soda. Mix until smooth.
- Pour the batter into the prepared pan.
- Bake for about 1 hour, or until a toothpick inserted into the center comes out clean.
- For the glaze, simmer fresh orange juice with honey until it reduces by half. Brush this over the warm cake once it has cooled slightly.
Notes
Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for about a week. For longer storage, freeze slices for up to 3 months.
