Preparation
- Hard boil the eggs, then peel and halve them.
- Remove the yolks and place them in a mixing bowl.
- Mash the yolks with mayonnaise, Dijon mustard, salt, and pepper until smooth.
- Fold in the caramelized onions.
- Spoon or pipe the mixture back into the egg white halves.
- Garnish with chives before serving.
Notes
Best enjoyed fresh, but can be stored in the fridge for about 3 days in an airtight container. For best results, keep the filling separate until ready to serve.
