  • 6 large eggs Hard boiled and peeled
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup caramelized onions
Garnish
  • to taste Chives For garnish

Method
 

Preparation
  1. Hard boil the eggs, then peel and halve them.
  2. Remove the yolks and place them in a mixing bowl.
  3. Mash the yolks with mayonnaise, Dijon mustard, salt, and pepper until smooth.
  4. Fold in the caramelized onions.
  5. Spoon or pipe the mixture back into the egg white halves.
  6. Garnish with chives before serving.

Notes

Best enjoyed fresh, but can be stored in the fridge for about 3 days in an airtight container. For best results, keep the filling separate until ready to serve.
