Ingredients

For the steak bites
  • 1 lb steak (sirloin, ribeye, or New York strip), cut into 1-inch cubes
  • 1 medium zucchini, cut into half-moons
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • optional Fresh parsley, chopped, for garnish

Method

Preparation
  1. Pat the steak bites dry with paper towels and season with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
Cooking
  1. Add steak bites to the skillet in a single layer. Sear for 1-2 minutes per side until browned. Remove steak and set aside.
  2. Add butter to the skillet. Once melted, add minced garlic and cook for about 30 seconds until fragrant.
  3. Add zucchini to the skillet and cook for 3-5 minutes until tender-crisp.
  4. Return steak bites to the skillet and toss to coat with garlic butter.
  5. Cook for another 1-2 minutes until steak is heated through.
  6. Garnish with fresh parsley if desired and serve immediately.

Notes

Use high heat for searing the steak to lock in juices and maximize flavor. Feel free to add crushed red pepper flakes for a kick.
