Ingredients
  

Dry Ingredients
  • 1.5 cups gluten-free flour blend
  • 3/4 teaspoon xanthan gum
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons light brown sugar
Wet Ingredients
  • 2/3 cup milk, dairy or non-dairy
  • 1 tablespoon oil
  • 2 pieces eggs or 6 tablespoons aquafaba
  • 2 teaspoons vanilla extract
Fritters
  • 2 pieces apples, peeled and finely diced
  • 3 cups powdered/icing sugar
  • 3 tablespoons milk, dairy or non-dairy (for icing)
  • 1/2 teaspoon vanilla extract (for icing)

Method
 

Preparation
  1. In a large mixing bowl, whisk together the gluten-free flour, xanthan gum, baking powder, salt, cinnamon, nutmeg, and brown sugar.
  2. Stir in the milk, oil, eggs (or aquafaba), and vanilla extract until you have a thick, smooth batter with no lumps.
  3. Gently fold in the diced apples.
Cooking
  1. Heat frying oil in a skillet to 360-375°F (80-90°C).
  2. Scoop 1-2 tablespoons of batter into the hot oil, frying about 3-4 fritters at a time.
  3. Cook each fritter for about 3 minutes on one side, then flip and fry for another 2-3 minutes until golden brown.
  4. Remove from oil and cool on a wire rack.
Icing
  1. For icing, combine powdered sugar, milk, and vanilla. Dip cooled fritters in glaze and let excess drip off.

Notes

These fritters are best served warm with icing. They can also be paired with ice cream or whipped cream. Store in an airtight container for 2 days or freeze for up to 2 months.
