Ingredients
  

Fritter Batter
  • 1.5 cup gluten-free flour blend
  • 0.75 teaspoon xanthan gum
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 2 tablespoons light brown sugar
  • 0.67 cup milk, dairy or non-dairy
  • 1 tablespoon oil
  • 2 large eggs or aquafaba Use 6 tablespoons aquafaba (90 ml) as a vegan alternative.
  • 2 teaspoons vanilla extract
  • 2 medium apples, peeled and finely diced
Icing
  • 3 cups powdered/icing sugar
  • 3 tablespoons milk, dairy or non-dairy
  • 0.5 teaspoon vanilla extract

Method
 

Preparation
  1. In a large mixing bowl, whisk together the gluten-free flour, xanthan gum, baking powder, salt, cinnamon, nutmeg, and brown sugar.
  2. Stir in the milk, oil, eggs (or aquafaba), and vanilla extract. Mix until you have a thick and smooth batter without lumps.
  3. Gently fold in the diced apples.
Cooking
  1. Heat oil in a large skillet or pot to 360-375°F (80-90°C), making sure the oil is about 1 1/2 - 2 inches deep.
  2. Once the oil is hot, scoop out 1-2 tablespoons of batter and drop it carefully into the oil, leaving space between each fritter as you cook.
  3. Fry each fritter for about 3 minutes on one side, then flip and cook for another 2-3 minutes until golden brown. Repeat until all the batter is gone.
  4. Remove fritters from the oil and let them cool on a wire rack.
Icing
  1. To make the icing, whisk the powdered sugar, milk, and vanilla extract in a small bowl until it forms a thick glaze.
  2. Dip each fritter into the glaze and let the excess drip off. Enjoy!

Notes

Serve these fritters warm, drizzled with icing. They make a great snack or dessert. Pair with ice cream or whipped cream for an extra treat. A dash of cinnamon on top can enhance their flavor! Store in an airtight container at room temperature for up to 2 days or in the refrigerator for up to a week. Reheat in the microwave for a few seconds before serving to regain crispiness. Ensure oil temperature is right for frying to avoid burnt fritters or those that absorb too much oil.
