Method
Preparation
- In a large mixing bowl, whisk together the gluten-free flour, xanthan gum, baking powder, salt, cinnamon, nutmeg, and brown sugar.
- Stir in the milk, oil, eggs (or aquafaba), and vanilla extract. Mix until you have a thick and smooth batter without lumps.
- Gently fold in the diced apples.
Cooking
- Heat oil in a large skillet or pot to 360-375°F (80-90°C), making sure the oil is about 1 1/2 - 2 inches deep.
- Once the oil is hot, scoop out 1-2 tablespoons of batter and drop it carefully into the oil, leaving space between each fritter as you cook.
- Fry each fritter for about 3 minutes on one side, then flip and cook for another 2-3 minutes until golden brown. Repeat until all the batter is gone.
- Remove fritters from the oil and let them cool on a wire rack.
Icing
- To make the icing, whisk the powdered sugar, milk, and vanilla extract in a small bowl until it forms a thick glaze.
- Dip each fritter into the glaze and let the excess drip off. Enjoy!
Notes
Serve these fritters warm, drizzled with icing. They make a great snack or dessert. Pair with ice cream or whipped cream for an extra treat. A dash of cinnamon on top can enhance their flavor! Store in an airtight container at room temperature for up to 2 days or in the refrigerator for up to a week. Reheat in the microwave for a few seconds before serving to regain crispiness. Ensure oil temperature is right for frying to avoid burnt fritters or those that absorb too much oil.
