Ingredients
  

Cinnamon Roll Batter
  • 1/4 cup gluten free pancake mix
  • 1/4 tsp baking powder
  • 2 tbsp almond milk (plus more, if needed)
  • 1 tbsp maple syrup
  • 1 tsp coconut oil
  • 1 pinch sea salt
  • 2 tsp coconut sugar
  • 1/4 tsp cinnamon
Sugar Glaze
  • 2 tbsp powdered sugar
  • 1 tsp almond milk

Method
 

Preparation
  1. In a greased shallow mug or a ramekin, combine all ingredients for the cinnamon roll.
  2. Whisk together with a fork until smooth. If the batter is too thick, add a splash more almond milk until it resembles a thick pancake batter.
  3. In a separate bowl, mix the coconut sugar and cinnamon together to make the cinnamon sugar.
  4. Sprinkle the cinnamon sugar evenly over the prepared batter.
  5. Use a knife or a chopstick to swirl the cinnamon sugar into the batter in a circular motion until it is evenly mixed.
Cooking
  1. Microwave for 1 minute to 1 minute 20 seconds, depending on your microwave's power.
  2. Combine ingredients for the sugar glaze until smooth, and drizzle it over the warm cinnamon roll.
  3. Enjoy warm!

Notes

This delicious cinnamon roll is best served warm. You can eat it directly from the mug or place it on a plate. For an extra touch, try adding some fresh fruit or a scoop of ice cream on the side. Adjust the sweetness by adding more or less coconut sugar.
