Muffin Ingredients
  • 2 cups gluten-free flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk (or dairy-free substitute)
  • 1/4 cup vegetable oil
  • 2 large eggs Can be substituted with flax eggs for a vegan option.
  • 1 teaspoon vanilla extract
Frosting Ingredients
  • 8 oz cream cheese Can be substituted with dairy-free cream cheese.
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a mixing bowl, combine gluten-free flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together milk, oil, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fill the muffin liners about 2/3 full with the batter.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
Frosting
  1. While the muffins are cooling, prepare the cream cheese frosting by beating the cream cheese, powdered sugar, and vanilla until smooth.
  2. Once cooled, spread the frosting on top of the muffins.

Notes

These muffins are best served fresh but can be stored in an airtight container. For longer storage, freeze the muffins wrapped in plastic wrap.
