- Preheat your oven to 375°F (190°C). Lightly grease a mini muffin tin with olive oil.
- In a large bowl, combine gluten-free flour, baking powder, Italian herbs, and salt. Mix well.
- Add the eggs and pizza sauce to the dry ingredients and stir until a smooth batter forms.
- Fold in the mozzarella cheese, mini pepperoni slices, and Parmesan cheese until evenly distributed.
- Spoon the batter into the prepared mini muffin tin, filling each cup about three-quarters full.
Baking
- Bake for 16–18 minutes, or until the pizza bites are golden and cooked through.
- Allow them to cool slightly before serving.
Notes
Serve warm or at room temperature. Pair with extra pizza sauce for dipping. Store in an airtight container for up to 3 days, or freeze for up to 3 months. Make sure to use high-quality gluten-free flour for best results. Customize toppings as desired.
