Dough Ingredients
  • 1 cup gluten-free all-purpose flour Use a high-quality blend for best texture.
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon dried Italian herbs
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup pizza sauce For mixing into the batter.
Mix-Ins
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup mini pepperoni slices Can substitute with veggies for a vegetarian option.
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon olive oil For greasing the muffin tin.

Preparation
  1. Preheat your oven to 375°F (190°C). Lightly grease a mini muffin tin with olive oil.
  2. In a large bowl, combine gluten-free flour, baking powder, Italian herbs, and salt. Mix well.
  3. Add the eggs and pizza sauce to the dry ingredients and stir until a smooth batter forms.
  4. Fold in the mozzarella cheese, mini pepperoni slices, and Parmesan cheese until evenly distributed.
  5. Spoon the batter into the prepared mini muffin tin, filling each cup about three-quarters full.
Baking
  1. Bake for 16–18 minutes, or until the pizza bites are golden and cooked through.
  2. Allow them to cool slightly before serving.

Notes

Serve warm or at room temperature. Pair with extra pizza sauce for dipping. Store in an airtight container for up to 3 days, or freeze for up to 3 months. Make sure to use high-quality gluten-free flour for best results. Customize toppings as desired.
