  • 1 cup gluten-free all-purpose flour Plus more for growing
  • 1 cup water Plus more for growing

Method
 

Preparation
  1. Combine 1 cup of gluten-free flour blend with 1 ¼ cups of water. Stir well until all the clumps are out.
  2. Cover the mixture with a kitchen towel and leave it untouched overnight.
Daily Feeding
  1. On the second day, discard half of the starter.
  2. Add another 1 cup of flour and 1 cup of water.
  3. Continue this process each day for the next 2 to 5 days, discarding half and feeding with the same 1:1 ratio.
  4. Ensure it shows signs of fermentation before using.

Notes

Make sure to use a gluten-free all-purpose flour that includes xanthan gum for better results. Keep the environment warm, around 70-75°F, to encourage fermentation. Always use clean utensils to prevent contamination.
