Ingredients
  

For the Chicken
  • 2 pieces chicken breasts, marinated Marinate in olive oil, lemon juice, garlic, oregano, salt, and pepper
For the Bowl
  • 1 cup cooked rice or quinoa
  • 1 piece cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup olives, pitted and sliced
  • to taste Feta cheese, crumbled
  • to taste Fresh parsley, chopped
  • to taste Salt and pepper
For the Tzatziki Sauce
  • 1 cup Greek yogurt
  • 1 piece cucumber, grated
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon dill

Method
 

Preparation
  1. Marinate the chicken breasts in olive oil, lemon juice, garlic, oregano, salt, and pepper for at least 30 minutes.
Cooking
  1. Grill the marinated chicken until cooked through, about 6-7 minutes on each side.
  2. Slice the chicken thinly.
Assembly
  1. In a bowl, layer the cooked rice or quinoa at the bottom.
  2. Top with grilled chicken, diced cucumber, cherry tomatoes, red onion, olives, and feta cheese.
  3. Drizzle with tzatziki sauce and sprinkle with fresh parsley.
  4. Serve immediately or store for meal prep.

Notes

For a flavorful dinner, marinate chicken in the morning. Leftovers can be stored in the fridge for 3-4 days. Consider packing components separately for meal prep.
