Ingredients
  

For the Chicken
  • 1 lb chicken breast Seasoned with olive oil, salt, and pepper.
  • 2 tablespoons olive oil For seasoning the chicken.
For the Bowl
  • 2 cups cooked quinoa or rice Base for the bowl.
  • 1 cucumber, diced Fresh and crunchy.
  • 1 cup cherry tomatoes, halved Adds sweetness and color.
  • 1 red onion, diced
  • 1 bell pepper, diced
  • 1 cup feta cheese, crumbled For topping.
  • Salt and pepper to taste
  • Lemon juice (to taste) For additional flavor.
  • Tzatziki sauce (store-bought or homemade) For drizzling on top.
For the Tzatziki Sauce
  • 1 cup yogurt Greek yogurt preferred.
  • 1/2 cup grated cucumber
  • 1 clove garlic, minced For flavor.
  • 2 tablespoons lemon juice Freshly squeezed.
  • 1 teaspoon salt
  • 1 teaspoon dill

Method
 

Preparation
  1. Preheat your grill or skillet over medium heat.
  2. Season the chicken breast with olive oil, salt, and pepper.
  3. Grill the chicken for 6-7 minutes on each side or until cooked through.
  4. Once done, let the chicken rest before slicing it into strips.
  5. In a large bowl, combine the cooked quinoa or rice with diced cucumber, cherry tomatoes, red onion, and bell pepper. Mix well.
Making Tzatziki Sauce
  1. In a separate bowl, mix yogurt, grated cucumber, garlic, lemon juice, salt, and dill to prepare the tzatziki sauce.
Assembly
  1. To assemble the bowls, place the quinoa or rice mixture at the bottom.
  2. Add sliced chicken on top, sprinkle with crumbled feta cheese, and drizzle with tzatziki sauce.
  3. Serve warm or cold.

Notes

Store leftovers in airtight containers in the fridge for 3-4 days. Keep tzatziki sauce separate until serving to maintain texture. Marinating chicken beforehand adds flavor. You can also use a grill pan if you don't have an outdoor grill. Feel free to add other vegetables like olives or spinach.
