Preparation
- Preheat your grill or skillet over medium heat.
- Season the chicken breast with olive oil, salt, and pepper.
- Grill the chicken for 6-7 minutes on each side or until cooked through.
- Once done, let the chicken rest before slicing it into strips.
- In a large bowl, combine the cooked quinoa or rice with diced cucumber, cherry tomatoes, red onion, and bell pepper. Mix well.
Making Tzatziki Sauce
- In a separate bowl, mix yogurt, grated cucumber, garlic, lemon juice, salt, and dill to prepare the tzatziki sauce.
Assembly
- To assemble the bowls, place the quinoa or rice mixture at the bottom.
- Add sliced chicken on top, sprinkle with crumbled feta cheese, and drizzle with tzatziki sauce.
- Serve warm or cold.
Notes
Store leftovers in airtight containers in the fridge for 3-4 days. Keep tzatziki sauce separate until serving to maintain texture. Marinating chicken beforehand adds flavor. You can also use a grill pan if you don't have an outdoor grill. Feel free to add other vegetables like olives or spinach.
