Ingredients
  

For the Chicken Bowl
  • 2 pieces chicken breasts Boneless and skinless
  • 1 cup cooked rice or quinoa Choose your preference
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 teaspoon oregano
  • to taste Salt and pepper
For the Tzatziki
  • 1 cup Greek yogurt
  • 1 clove garlic, minced
  • 1/2 cup cucumber, grated and drained Use the same cucumber for the bowl
  • 1 tablespoon lemon juice
  • to taste Salt

Method
 

Preparation
  1. In a bowl, whisk together olive oil, oregano, salt, and pepper. Marinate the chicken for at least 30 minutes.
  2. For the tzatziki, combine Greek yogurt, minced garlic, grated cucumber, lemon juice, and salt in a bowl. Mix well and refrigerate.
Cooking
  1. Grill or pan-sear the chicken until fully cooked, about 6-7 minutes on each side. Let it rest before slicing.
Assembly
  1. In serving bowls, layer cooked rice or quinoa, sliced chicken, diced veggies, olives, and feta cheese.
  2. Drizzle with tzatziki sauce and serve immediately.

Notes

Store components separately in the fridge for meal prep. Can be stored for 3-4 days.
