Preparation
- In a bowl, whisk together olive oil, oregano, salt, and pepper. Marinate the chicken for at least 30 minutes.
- For the tzatziki, combine Greek yogurt, minced garlic, grated cucumber, lemon juice, and salt in a bowl. Mix well and refrigerate.
Cooking
- Grill or pan-sear the chicken until fully cooked, about 6-7 minutes on each side. Let it rest before slicing.
Assembly
- In serving bowls, layer cooked rice or quinoa, sliced chicken, diced veggies, olives, and feta cheese.
- Drizzle with tzatziki sauce and serve immediately.
