Preparation
- In a blender, blend the rolled oats until they become a fine flour.
- In a mixing bowl, combine the oat flour, applesauce, eggs, baking powder, cinnamon, salt, and vanilla extract. Mix until well combined.
Cooking
- Heat a skillet over medium heat and add cooking spray or oil.
- Pour 1/4 cup of the batter onto the skillet for each pancake.
- Cook for about 2-3 minutes or until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
- Serve warm with your choice of toppings.
Notes
Store leftover pancakes in an airtight container in the fridge for up to 3 days, or freeze them for up to a month with parchment paper in between each pancake. Adjust sweetness with honey or maple syrup, and experiment with different spices for added flavor.
