Ingredients
  

Pancake Batter
  • 1 cup rolled oats Blend to make oat flour
  • 1 cup applesauce
  • 2 pieces eggs
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 pinch salt
  • 1/2 teaspoon vanilla extract
  • as needed cooking spray or oil for the pan for frying

Method
 

Preparation
  1. In a blender, blend the rolled oats until they become a fine flour.
  2. In a mixing bowl, combine the oat flour, applesauce, eggs, baking powder, cinnamon, salt, and vanilla extract. Mix until well combined.
Cooking
  1. Heat a skillet over medium heat and add cooking spray or oil.
  2. Pour 1/4 cup of the batter onto the skillet for each pancake.
  3. Cook for about 2-3 minutes or until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
  4. Serve warm with your choice of toppings.

Notes

Store leftover pancakes in an airtight container in the fridge for up to 3 days, or freeze them for up to a month with parchment paper in between each pancake. Adjust sweetness with honey or maple syrup, and experiment with different spices for added flavor.
