  • 1 cup gluten-free rolled oats
  • 2 oz ripe medium banana, mashed (about 3.2 oz)
  • 1/4 cup unsweetened applesauce
  • 2 tbsp peanut butter or any nut butter
  • 1 egg (or substitute with 1 flax egg)
  • 1 tsp vanilla extract
  • 1/4 tsp ground cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium bowl, mix together the oats, mashed banana, applesauce, peanut butter, egg, vanilla, and cinnamon until well combined.
  3. Use a cookie scoop or spoon to form 1-½ to 2 tablespoon-sized cookie balls and place them onto the baking sheet. Flatten each ball to about ½ inch thick.
Baking
  1. Bake for about 10 minutes or until the edges are slightly golden.
  2. Let cool before serving.

Notes

These cookies can be served warm or at room temperature. They make a great breakfast on the go or a healthy snack during the day. Pair them with a glass of milk or yogurt for added nutrition. Store the cookies in an airtight container at room temperature for up to three days. If you want to keep them longer, you can freeze them for about two months.
