  • 1 tablespoon Sesame Oil (optional)
  • 2 cups Fresh Vegetables (e.g., Broccoli, Green Onions, bell peppers, snap peas) Use a mix of your favorites.
  • 2 cups Rice (White or Brown, or quinoa, cauliflower rice) This is the base of your bowl.

Preparation
  1. Cook the rice according to package instructions.
  2. Cut the chicken thighs into bite-sized pieces.
  3. In a bowl, whisk together soy sauce, honey, garlic, brown sugar, rice vinegar, and sesame oil.
Cooking
  1. In a large pan over medium heat, add the chicken and cook until browned, about 5-7 minutes.
  2. Pour the sauce over the chicken and let it simmer until thick and sticky, typically 2-3 minutes.
  3. Add your fresh veggies to the pan and stir-fry until they’re vibrant and tender, about 4-5 minutes.
Serving
  1. Assemble your bowls by layering rice, chicken, and veggies. Enjoy!

Notes

Serve these bowls hot, with sesame seeds or sliced green onions on top. Optional: drizzle more soy sauce or a squeeze of lime for zest. For a spicier kick, add chili flakes or sriracha.
