Ingredients
  

Vegetables
  • 1 pound carrots, peeled and sliced
  • 1 pound green beans, trimmed
Glaze
  • 2 tablespoons olive oil
  • 1/4 cup honey
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • to taste salt and pepper
Garnish
  • 1 tablespoon chopped fresh parsley for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the sliced carrots and green beans with olive oil, honey, lemon juice, cinnamon, nutmeg, salt, and pepper until evenly coated.
Cooking
  1. Spread the vegetables in a single layer on a baking sheet.
  2. Roast for 20-25 minutes or until the carrots are tender and slightly caramelized, and the green beans are tender-crisp. Stir halfway through cooking.
Serving
  1. Remove from the oven and transfer to a serving dish.
  2. Garnish with chopped fresh parsley and enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to three days or freeze for up to three months. Reheat in the oven or microwave.
