Method
 

Preparation
  1. Peel the hard-boiled eggs and chop them into small pieces.
  2. In a bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper.
  3. Add the chopped eggs to the mixture and gently fold until well combined.
  4. If desired, stir in chopped green onions or chives.
  5. Serve chilled, garnished with a sprinkle of paprika.

Notes

Store any leftovers in an airtight container in the refrigerator for up to three days. For best taste, consume within one to two days.
