  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup lemon juice Fresh lemon juice recommended
  • 1 none Zest of 1 lemon Use fresh zest for best flavor
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
Glaze
  • 1 cup powdered sugar
  • 1-2 tablespoons lemon juice Adjust for consistency

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. In a bowl, mix melted butter and sugar until smooth.
  3. Add eggs, lemon juice, and lemon zest, stirring until well combined.
  4. In another bowl, whisk together flour, salt, and baking powder.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Pour the batter into the prepared baking dish and spread evenly.
Baking
  1. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  2. For the glaze, whisk together powdered sugar and lemon juice until smooth.
  3. Once brownies have cooled, drizzle the glaze on top.
  4. Cut into squares and serve.

Notes

Store brownies in an airtight container in the fridge for about 4-5 days. Freeze for up to 3 months. For variations, add blueberries or make a vegan version with flax eggs and plant-based butter.
