  • 4 large baking potatoes
  • 1 cup sour cream Can substitute with Greek yogurt.
  • 1 cup shredded cheddar cheese Plus more for topping if desired.
  • 1/2 cup cooked bacon, crumbled Plus more for topping if desired.
  • 1/4 cup green onions, chopped
  • 1/2 cup milk
  • 1/2 cup butter, melted
  • to taste salt and pepper

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Bake the potatoes until tender, about 1 hour.
  3. Allow the potatoes to cool slightly, then scoop out the insides into a bowl.
  4. Mash the potatoes with sour cream, milk, and melted butter until smooth.
  5. Stir in the cheddar cheese, bacon, green onions, salt, and pepper until well mixed.
  6. Transfer the mixture back into the potato skins or a baking dish.
  7. Top with additional cheese and bacon if you like.
Baking
  1. Bake for 20-25 minutes until heated through and the cheese is bubbly.

Notes

To store leftovers, cool and cover with plastic wrap or transfer to an airtight container. Keep in fridge for up to 3 days or freeze for up to 2 months. Reheat thoroughly before serving.
