  • 6 large large eggs
  • 4 strips bacon Cook until crispy
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white vinegar
  • to taste Salt
  • to taste Pepper
  • Chopped chives For garnish

Method
 

Preparation
  1. Boil the eggs in a pot of water for about 10-12 minutes. Once cooked, place them in an ice bath to cool.
  2. Meanwhile, cook the bacon in a skillet until crispy. Remove and drain on paper towels, then crumble.
  3. Peel the cooled eggs and slice them in half. Remove the yolks and place them in a mixing bowl.
  4. Mash the yolks and then mix in the mayonnaise, Dijon mustard, white vinegar, salt, and pepper until smooth.
  5. Stir in half of the crumbled bacon.
  6. Spoon or pipe the yolk mixture back into the egg whites.
  7. Top with the remaining bacon and garnish with chopped chives. Serve and enjoy!

Notes

These deviled eggs can be made ahead of time and stored in an airtight container in the fridge for up to two days. Best served cold for optimal texture.
