Preparation
- Place eggs in a large pot and cover with water. Bring to a boil, then cover, turn off heat, and let sit for 12 minutes.
- Transfer eggs immediately to an ice bath to cool completely for 15 minutes.
- Peel the eggs carefully and slice them in half lengthwise. Wipe the knife clean between cuts.
- Remove the yolks and place them in a mixing bowl. Set the whites aside on a platter.
Mixing the Filling
- Mash the yolks with a fork, then add mayonnaise, softened butter, Dijon mustard, pickle juice, salt, pepper, sugar, and cayenne.
- Use a hand mixer to beat the filling until it is smooth and creamy (no lumps, please!).
Assembly
- Transfer filling to a piping bag fitted with a star tip and pipe generously into the egg whites.
- Top with crumbled bacon, chopped chives, and a dusting of smoked paprika.
- Serve immediately or refrigerate until ready to eat.
Notes
Use farm-fresh eggs for easier peeling. You can substitute Dijon with your favorite mustard. Preserving the smoky paprika enhances the flavor.
