  • 1.5 lbs Yukon gold potatoes, cut into 1-inch pieces
  • 1 lbs asparagus, trimmed
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons lemon juice
  • 2 tablespoons chopped fresh parsley, for garnish

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss together the potatoes, asparagus, minced garlic, olive oil, oregano, salt, and black pepper.
  3. Spread the mixture in a single layer on a large baking sheet.
Cooking
  1. Roast for 20-25 minutes, or until the potatoes are tender and the asparagus is crisp-tender, flipping the vegetables halfway through cooking.
  2. Remove from the oven and drizzle with lemon juice.
Serving
  1. Garnish with fresh parsley and serve immediately.

Notes

Make sure to cut the potatoes into uniform pieces for even cooking. Feel free to add other vegetables like bell peppers or cherry tomatoes for more color and flavor. Adjust the garlic according to your taste.
