  • 1 pound Kielbasa Any preferred smoked sausage can be used.
  • 2 tablespoons Honey Adjust sweetness to taste.
  • 3 cloves Garlic (minced) Toasting garlic enhances flavor.
  • 2 tablespoons Soy Sauce
  • 1 each Bell Peppers (red & yellow) Chop into bite-sized pieces.
  • 1 cup Baby Carrots Cut larger carrots into smaller pieces.
  • 1 pound Baby Potatoes Cut in half for even cooking.
  • 2 tablespoons Olive Oil
  • 2 tablespoons Fresh Parsley or Green Onions For garnish.

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix olive oil, honey, minced garlic, and soy sauce.
  3. Add kielbasa, bell peppers, baby potatoes, and baby carrots. Toss everything until well-coated.
  4. Spread the mixture onto a baking sheet in a single layer.
Cooking
  1. Roast for about 25-30 minutes, or until the veggies are crisp-tender and the kielbasa is browned.
  2. Sprinkle with fresh parsley or green onions before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. For freezing, consume within 2 months. Prep ingredients in advance for easier cooking.
