Preparation
- Preheat the oven to 350°F (175°C) and grease a 2-quart baking dish.
- In a large bowl, combine oats, baking powder, cinnamon, and salt. Stir to mix well.
- Add the milk, maple syrup, egg or chia egg, melted butter or oil, and vanilla to the dry ingredients. Mix until well combined.
Assembly
- Pour the oatmeal mixture into the prepared baking dish.
- In a separate bowl, melt 2 tablespoons of butter and mix with 1/4 cup syrup. Add the pecans and stir to coat.
- Pour the pecan mixture over the oatmeal and spread it out evenly.
Baking
- Bake for 35-40 minutes, or until the top is golden and set.
- Let the baked oatmeal cool for 5 minutes before serving.
Notes
You can serve warm or after cooling. Add a dollop of yogurt or drizzle extra maple syrup for enhanced flavor. Store in an airtight container in the refrigerator for 2-3 days. Reheat individual portions in the microwave.
