Preparation
- Preheat your oven to 425°F (220°C).
- Prepare the lobster tails: Cut through the top shell with kitchen scissors, just down to the tail, and gently pull apart the shell.
- Mix parsley, garlic, dijon mustard, salt, pepper, olive oil, and lemon juice in a bowl.
- Spoon the mixture over the lobster meat, spreading it evenly.
- Top each tail with 2 Tbsp of butter.
Cooking
- Place the tails on a baking dish and cook for 12-15 minutes or until the meat is opaque.
- Drizzle the remaining melted butter over the tails and garnish with extra parsley before serving.
Notes
Serve on a stunning platter with a sprinkle of fresh parsley. Pair with a light salad or garlic bread.
