For the lobster tails
  • 4 pieces lobster tails (5 to 6 oz each) Fresh, high-quality tails make all the difference!
  • 1 Tbsp fresh parsley (very finely chopped, plus more for garnish) Fresh parsley adds a bright flavor.
  • 2 cloves garlic (pressed) Toasted garlic enhances flavor but is optional.
  • 1 tsp dijon mustard For a subtle tanginess.
  • 1/4 tsp fine sea salt
  • 1/8 tsp freshly cracked black pepper
  • 1 1/2 Tbsp olive oil
  • 1 1/2 Tbsp fresh lemon juice For acidity and brightness.
  • 4 Tbsp unsalted butter (divided) Butter is key for richness.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Prepare the lobster tails: Cut through the top shell with kitchen scissors, just down to the tail, and gently pull apart the shell.
  3. Mix parsley, garlic, dijon mustard, salt, pepper, olive oil, and lemon juice in a bowl.
  4. Spoon the mixture over the lobster meat, spreading it evenly.
  5. Top each tail with 2 Tbsp of butter.
Cooking
  1. Place the tails on a baking dish and cook for 12-15 minutes or until the meat is opaque.
  2. Drizzle the remaining melted butter over the tails and garnish with extra parsley before serving.

Notes

Serve on a stunning platter with a sprinkle of fresh parsley. Pair with a light salad or garlic bread.
