  • 1 cup fresh pineapple, diced Can use canned if fresh is unavailable

  • 2 tablespoons lime juice Freshly squeezed preferred

Method
 

Preparation
  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine the diced pineapple, red onion, bell pepper, lime juice, chili powder, salt, and pepper.
Cooking
  1. Season the chicken breasts with salt and pepper, then grill for 6-7 minutes on each side, or until cooked through.
  2. Remove chicken from the grill and let it rest for a few minutes before slicing.
  3. Warm the corn tortillas on the grill for about 30 seconds per side.
Assembly
  1. Assemble the tacos: on each tortilla, add sliced chicken and a generous spoonful of the pineapple mixture.
  2. Garnish with fresh cilantro and serve immediately.

Notes

Feel free to mix and match the veggies or make a bowl with rice. For added flavor, marinate the chicken in lime juice and chili powder for an hour before grilling.
